Spinach Casserole

Get your your Birkenstocks and sit down to a light supper.  This recipe is based on one from Diet for a Small Planet.
(There is no pretty picture because it’s not so pretty!)
Serves 4
3/4 cup raw brown rice, cooked
3/4 cup shredded cheddar cheese
1 b fresh spinach, chopped
1/4 cup finely chopped onion
2 eggs, beaten
1/2 teaspoon salt
1/4 teaspoon pepper
2 T wheat germ
1 tablespoon butter
Toss together the cooked rice, cheese, spinach and onions.  Combine the eggs, salt and pepper.  Combine the two.  Pour this into an oiled 8 X 8-9 X 9″ pan.  Sprinkle wheat germ on top and dot with butter.  (or mix wheat germ with melted butter and sprinkle on top.)
Bake 350 deg. F for 35 minutes.
